What counts as a menu change?
Any edit that makes the printed information wrong: a new dish, a removed dish, a recipe or supplier change that alters allergens, or a price change. If your allergen card is separate from the menu, an ingredient swap alone can force a reprint even when the menu text stays the same.
Should I include the time spent proofing the new version?
Yes. Hours per change should cover updating the source file, checking allergen information against the new recipe, proofing, ordering and physically swapping the copies. That is usually more time than the print run itself.
Does this compare against a digital or QR menu?
Not directly. It gives you the true annual cost of the printed approach, which you can then compare against whatever a digital menu would cost you per year, including the time to update it.
